Summer changes everything about how we eat. The appetite shifts, the light gets longer, and suddenly a cold coffee and a plate of fruit feels like the best idea in the world. This is my guide to brunch with us across Barcelona and Madrid through summer 2026, from someone who has spent a lot of hot mornings behind the pass.
I'm Genia, I run the kitchens, and warm weather is my favourite season to cook for. Here is what I would order, and when I would come, to eat well while the cities heat up.
How summer changes the way we eat brunch
In July and August, nobody wants a heavy plate at noon. You want something bright, something cold to drink, and a table where the air moves. So in summer we lean into fresh fruit, lighter proteins and plenty of cold coffee. The menu does not change its soul, it just dresses for the weather.
My advice, honestly, is to come a little earlier than you would in winter. The morning is the kindest part of a Spanish summer day, and brunch is built for it.
What should you order when it is hot?
Order for the temperature. Start cold, keep the plates bright, and do not overdo it. Here is how I would build a summer brunch across any of our kitchens, whether you are in Barcelona or Madrid.
Cold drinks first
Begin with an iced specialty coffee, or a cold, fresh juice if you want something without caffeine. On a hot morning the drink matters as much as the food, and a good iced coffee made from properly pulled espresso is a different thing entirely from the watery version you might expect.
Lighter, brighter plates
Reach for the Protein Bowl at €14.50: quinoa, avocado, arugula, poached eggs and a citrus dressing, clean fuel that still eats like brunch. The Pavlova Pancakes at €12.50 are all fresh fruit and berry compote, which feels right in summer. If you want savoury, the Mexican Toast at €13.50 brings a cool, herby, jalapeño lift. Save the full Macho Iberico Benedict at €14.90 for a cooler day, or share it.
Where can you find us in Barcelona?
We have two kitchens in Barcelona, both in the Eixample and both walk-in. Our Borrell kitchen sits in the Eixample Esquerra, while our Consell kitchen is steps from Casa Batlló. In summer, an early table before the heat peaks is the move. Both serve the full menu all day.
Where can you find us in Madrid?
Madrid has two kitchens as well. Come to us in Malasaña for the neighbourhood buzz, or to Gran Vía in the centre when you are near the big streets. Madrid summers run hot and dry, so a cold drink and an early start go a long way here.
What are the best hours for a summer brunch?
Come early. The coolest, calmest window is right after we open, and in summer that first hour or two is a gift before the cities warm up. Late afternoon works too, once the worst of the heat has passed and the light turns golden.
